Candied Yams

Yum! Candied sweets! Also called candied yams, this delicious dish makes veggies so fun to eat. I got this recipe from my cousin who makes this for her family for the holidays. The citrus flavor from the orange juice is a great addition. I also made a few tiny changes the second time I made this dish. I have applied these changes and the original recipe here:

Candied Sweets
Serves 8 to 10.

  • 2-1/2 lbs sweet potatoes, peeled
  • ¼ cup fresh orange juice
  • ½ cup pure maple syrup (or karo syrup)
  • 3 TB unsalted butter
  • 1-1/2 tsp ground ginger (or 1/2 tsp ground ginger, + 1/2 tsp ground cinnamon)
  • Salt, to taste

Topping:

  • Miniature marshmallows
  • brown sugar

1. Cut the potatoes into 1-inch pieces; cook in boiling, salted water until very tender about15 minutes. Drain well; remove to a bowl.

Mash with remaining ingredients (except marshmallows and brown sugar) while the potatoes are hot.

Spoon into an oven-to-table dish. (Can be refrigerated for later)

Top with brown sugar. Place in 350-degree oven for 15 to 20 minutes. During the last 5 minutes, dot with marshmallows, if desired, until marshmallows turn a golden brown.
